Flying Knives Steer Butchery Competition | Oakland

Take a break from chowing down at the 2011 Eat Real Festival and watch as teams of master butchers dismantle a hindquarter of steer in this fast-paced butchery frenzy.

Vegans will cringe and carnivores will roar as you watch three competing teams of butchers break down a steer hindquarter right before your eyes.

They’ll have 45 minutes to make their high quality cuts – from primal to retail. Judges will be looking for accuracy, quality of trimmings, technique, and teamwork and hopefully with all of their fingers still attached.
