Ever wonder what California would be like if the Golden State had remained a colony of Spain? The newest destination on Polk Street offers a glimpse into the eating and drinking culture of this alternate reality, grafting Spanish flavors and style onto local ingredients to create a gastronomic tradition that might have been. El Lopo is located at 1327 Polk Street and will be hosting a Grand Opening event on Friday, March 22nd from 6pm to midnight.
The Spanish influence extends beyond the ubiquity of saffron and paprika on the menu, and is most clearly felt in El Lopo’s distinctive dining format. An 18-seat bar dominates the cozy 1000-square-foot space, with the open kitchen behind it fully visible to patrons at the counter. With the layout forcing a union between front- and back-of-house, bartenders will be seen plating dishes as regularly as cooks pour drinks.
The event on the 22nd will mark the debut of the bar’s full menu after several weeks of testing, training, and tweaking under limited operating hours. El Lopo’s signature tortillas, a hybrid of the Spanish potato omelet and the Mexican flatbread that share the name, will be making their first appearance since El Lopo’s early days as a pop-up in another space. Guests attending the Grand Opening will also be greeted with live music, free snacks, and a “Buy One, Gift One” deal, in which they can designate a stranger to receive a duplicate of any drink they purchase. A porrón drinking lesson will take place at 10:30pm, with manzanilla sherry provided for practice.
El Lopo will be open nightly from 4 pm – 12 am Sunday – Thursday, and 4 pm – 2 am Friday and Saturday. The full food menu will be available from 5 – 11 pm, with empanadas, charcuterie, and tinned seafood available after hours.
