Experience an exclusive whiskey pairing dinner at The Third Floor at The Jay, featuring St. George Spirits’ Head Distiller Dave Smith. Enjoy a meticulously crafted five-course menu, expertly prepared by Chef Michael Magallanes, with each course paired with a signature cocktail and a neat pour of St. George’s Baller, Lot 23, and Lot 24 whiskies.

The evening begins with a welcome reception and a Baller highball, setting the stage for a guided tasting experience led by Dave Smith, who will share insights into each whiskey selection.

About Dave Smith:
Dave Smith joined St. George Spirits in 2005, bringing with him a background in teaching and winemaking. Over the years, he has become the custodian and guiding hand behind St. George’s whiskey program, earning recognition such as being named to the San Francisco Business Times “40 Under 40” list. His meticulous approach and blending expertise have been instrumental in the development of St. George’s acclaimed single malt whiskeys.

Amuse: Spiced carrot, pickled pearl onion, coffee, puffed rice

First Course: Roasted beets, Meyer lemon crème, hearts of palm, celery

Second Course: Grilled octopus, brassicas, chickpea purée, chorizo

Third Course: Braised beef short rib, parsnip, apple slaw, mustard

Fourth Course: Hazelnut panna cotta, citrus, dark chocolate glaze
