Raised in Salt Lake City, pastry chef Curtis McDonald is the newest addition to the culinary team at Bluestem Brasserie. McDonald relocated to San Francisco eight years ago to begin his gastronomic journey at the California Culinary Academy. He launched his career at Octavia Lounge as a brunch cook. McDonald moved on to learn the fundamentals of working in a kitchen by gaining experience as the executive pastry chef at many notable restaurants and boutique hotels in San Francisco, including Market & Rye, 1300 on Fillmore and the restaurants at The Orchard Garden Hotel – Daffodil and Roots. Always yearning to express his creativity through art, his position at 1300 on Fillmore opened his eyes to a different approach to pastry. Working alongside the talented pâtissière Noriko Abe, who introduced him to the art of preparing pastries with Japanese precision, he modified his approach to techniques, ingredients and plating design. McDonald also contributed his talents to the San Francisco cult favorite The Crème Brulee cart by developing interesting flavor pairings.

Inspired by the dynamic techniques of a pastry chef, McDonald takes pride in his custom creations by turning simple ingredients into beautiful, elegant arrangements. His desserts showcase classic American favorites with a twist of French and Austrian flavors, resulting in innovative concoctions and recognizable profiles.
