Flying Knives Pig Butchery Competition | Oakland

Take a break from chowing down at the 2011 Eat Real Festival as three teams of butchers go hog wild in this pig butchery contest.

They’ll have 45 minutes to make their high quality cuts – from primal to retail. Judges will be looking for accuracy, quality of trimmings, technique, and teamwork.

Tasty Samples! The other half of the boar will be BBQ and handed out for audience sampling.
