In this cooking class, Chef Edwin shares the secret of Um.Ma’s unique take on the fried chicken sandwich. This mouth-watering meld of Korean and soul flavors draws on the legendary southern-style “Nashville Hot Chicken Sandwich” combined with Korean spicy seasonings and toppings of cucumber “muchim” (or salad) and kimchi slaw. All served on a brioche bun.

Edwin Bayone III, Chef
Edwin, born in Stockton, CA and raised in Sacramento, brings his passion for food and family to his role as Executive Chef at Um.Ma SF. He began his career working at traditional French, Italian, New American and Creole Soul restaurants in the Sacramento area. Chasing his dream to train in Michelin-starred restaurants, he moved to San Francisco and dove head first into the industry, training in the kitchens at Saison, Angler, Wayfare Tavern, and others, Under his leadership, Um.Ma SF was awarded “Best New Restaurant” in America by Thrillist in its first year of service. His blend of Seoul and Soul food reflects his creativity, passion, and indomitable spirit. Edwin is now looking forward to expanding the brand with his sights set on the East Bay and his hometown of Sacramento.
